I’m usually very organised when it comes to planning our midweek dinners, always making sure I have all the ingredients on hand. But come the weekend, my brain seems to switch off – I forget that I still need to eat! The last thing I want is to get dressed and rush to the supermarket on an empty stomach. That’s exactly how this easy Breakfast Quesadilla was born: quick, satisfying, and made with what I already had at home.

Tortilla wraps to the rescue

I may not always be on top of the fresh bread situation, but I always have a packet of tortilla wraps in the freezer. During the week, I cook just for my husband and me, so after a fajita night, there are always a few wraps left over. They freeze beautifully and defrost in no time.

Why streaky bacon and a simple egg work best

While I understand the push toward healthier eating, I find that lean back bacon or medallions can end up a bit dry and lacking in flavour. With so few ingredients in this recipe, each one needs to stand out. That’s why I prefer streaky bacon – it crisps up nicely and leaves just enough fat in the pan to cook the wrap, adding extra flavour.

For the egg, I use one large free-range egg to make a very thin, plain omelette – just enough to hold its own without dominating the wrap. I like it slightly crispy around the edges for added texture.

Cheese choices

Let’s be honest, most of us have a block of cheddar in the fridge at all times. I typically use mature cheddar for its bold flavour, but feel free to use any cheese you like, as long as it melts well. The cheese acts as the “glue” that holds the quesadilla together. I wouldn’t recommend mozzarella – its mild flavour tends to get lost in this dish. You want a cheese that can be tasted, not just melted.

Optional extras

Want to add some extra flavour to your egg? A pinch of paprika, a dash of chili, or a sprinkle of dried herbs works well. Just go easy on the salt – both the bacon and cheese are already salty enough.

Serving suggestions

Serve your breakfast quesadilla with ketchup for dunking or a splash of chili sauce if you’re in the mood for heat.

Ingredients

  • 1 large egg

  • 3 slices streaky bacon

  • Small handful grated cheddar cheese

  • 1 tortilla wrap

  • Oil for frying

Directions

  • Heat a little oil in a frying pan (the inner diameter needs to be at least 23cm to fit the wrap). At the same time, mix up the egg with a fork in a separate bowl (add any of the optional seasoning at this stage).
  • Once the oil has come to temperature, poor in the egg and swirl around the pan to achieve an even coating. The egg doesn’t take long to cook so be careful not to burn it.
  • Place the tortilla wrap on a plate, remove the egg with a wide spatula and place it directly on the wrap, covering half of the circle.
  • Add the bacon to the pan, with another small amount of oil if necessary, and cook turning frequently. Once the bacon is fully cooked, remove from the pan and reduce the temperature to a medium high.
  • Carefully lift the prepared egg wrap to the pan, which should still contain some of the bacon oil for extra flavour. Distribute the bacon on top of the egg, sprinkle with the grated cheddar cheese and fold over the empty half of the wrap.
  • Use the spatula to press down on the wrap and fry for a minute. Once the cheese has started to melt slightly, turn over the wrap, pressing down lightly on the other side. Continue to turn and fry until both sides have browned and the cheese has fully melted.
  • Remove to a chopping board, cut into 3 triangles and serve with ketchup or chilli sauce.

Optional

  • If you would like to add any additional seasoning to the egg, paprika powder, chilli or dried herbs work well, just keep in mind to go easy on the salt as both the bacon and cheese are salty already.
  • Best served with with some ketchup for dunking or your choice of chilli sauce to crank up the heat factor.
