When the Sun Comes Out … It’s Daiquiri Time in my house!

If you live in England, like I do, you’ll know sunshine is something of a rare commodity. Sadly, the stereotype of English weather – rainy summers, grey springs and autumns, and dark, dreary winters – isn’t too far off the mark.

So, when the weather forecast dares to predict a sunny weekend, we get excited. VERY excited.

Out come the summer clothes normally reserved for beach holidays abroad. The barbeque – coated in a layer of dust and spider webs – finally gets some love. And if the weather gods forecast anything above 30°C, we start scrambling to order blow-up paddling pools and portable aircon units from Amazon. Sounds familiar or is that just me?

We make the most of those rare, glorious days: lounging in gardens we barely use the rest of the year, living our best outdoor lives, and soaking in the fleeting illusion that we’re somewhere far sunnier than we actually are.

Sunshine = Cocktail Time

And what better companion for those magical days when the UK almost feels like the Mediterranean? A chilled cocktail in hand, of course.

We might not have the pool or the palm trees – but with the right drink, we can at least pretend.

My favourite? Frozen daiquiris. They’re ice-cold, fruity, sweet, and just boozy enough to make the world melt away for a couple of blissful hours.

A Quick History of the Daiquiri

The daiquiri originated in Cuba in the late 1890s, believed to have been created by an American engineer near the town of Daiquiri. He combined simple local ingredients and – voilà! – a legend was born.

The Classic Daiquiri Formula

Traditionally, a daiquiri is made using just three ingredients:

  • White rum
  • Citrus juice (typically lime)
  • Sugar or another sweetener

But like most classic recipes, it didn’t stop there. Over time, creative bartenders (and home experimenters like me!) have taken it to new heights with a variety of fruit-based twists.

My Favourite: The Frozen Fruit Daiquiri

Think of it as a grown-up slushy – fun, refreshing, and just a little bit naughty.

I like to use dark rum in addition to white. It’s not traditional, but it adds a rich, deep flavour that balances beautifully with the fruit. For convenience, I go with ready-frozen strawberries straight from the supermarket freezer section. Super easy, super tasty.

You can experiment with other fruits, but high-water-content fruits tend to work best. (Tip: mixed frozen berries work great. I once tried frozen mango – don’t recommend it. The texture just doesn’t blend well.)

One of my all-time favourites is frozen watermelon. It’s smooth, light, and ultra-refreshing – perfect for those peak summer days. Simply chop a melon into chunks, remove the seeds, freeze, and blend when needed. But that’s a recipe for another post.

Balancing Tart and Sweet in Your Cocktails

When it comes to cocktails, finding the perfect balance between tart and sweet is key. One of my go-to sweeteners is sugar syrup – simple, effective, and easy to make. But you don’t necessarily always need it for this cocktail recipe.

It all depends on the fruit you’re using. Some fruits are naturally sweeter, while others bring a sharp, tangy bite. Since this recipe also includes lime juice, there’s already a built-in tartness. In most cases, a touch of syrup creates a really nice sweet-sour harmony – but feel free to taste as you go and adjust accordingly.

How to Make Sugar Syrup

Making sugar syrup couldn’t be easier. Here’s a basic recipe:

Ingredients:

  • 300g caster sugar
  • 150ml water

Instructions:

  1. Combine the sugar and water in a small saucepan
  2. Heat gently over low heat, stirring until the sugar dissolves completely
  3. Let it cool, then pour into a clean bottle or jar

That’s it! Store it in the fridge and it’ll last for ages – ready to sweeten your next cocktail whenever inspiration strikes.

So next time the British summer decides to make an appearance, be ready. Grab your blender, dig out those summer clothes, and make yourself a frozen daiquiri. It won’t last – but that’s what makes it special.

Frozen Strawberry Daiquiri

Ingredients

  • 350g frozen strawberries

  • 100ml white rum

  • 100ml dark rum

  • 200ml orange juice

  • Juice of 1 lime (2tbsp)

  • 2tbsp simple syrup

Directions

  • Place all the ingredients in a blender and blend until smooth.
  • Pour into a cocktail glass and serve immediately.

  • Makes 1 litre jug.
  • To make simple syrup, combine 300g of caster sugar with 150ml of water in a small saucepan. Heat gently over low heat, stirring until the sugar has fully dissolved. Allow the syrup to cool, then transfer it to a clean bottle or jar and store it in the fridge.
  • For this recipe, I’ve used frozen strawberries, but you can experiment with any fruit you like. Fruits with high water content – such as frozen mixed berries or watermelon – work best to achieve the ideal texture.
