If you asked me what the most popular meat in Austria is, I’d answer without hesitation: pork. In fact, the country’s outline even looks a little like a pork chop – coincidence? Maybe not.

We really do go the whole hog there. Pork is enjoyed in countless ways: grilled, stewed, fried, braised, roasted, cured, smoked, and seasoned with herbs and spices. Among these, one cut deserves special attention: the pork fillet, also known as pork tenderloin.

Juicy glazed BBQ pork fillet served with hearty brown rice, peppers & beans. A quick, smoky and healthy recipe with big flavour – perfect for weeknight dinners.

Ingredients

  • Pork
  • 600g pork fillet

  • 1tsp ground allspice

  • Salt and black pepper

  • Oil for frying

  • 200ml BBQ sauce (see recipe link in notes)

  • Pepper rice
  • 1tsp Oil (for frying)

  • 1tsp whole fennel seeds

  • 1/4tsp whole cumin seeds

  • 1 red onion

  • 2 peppers (red, yellow or orange)

  • 120g cooked green beans

  • 300g cooked brown rice

  • 1tsp smoked paprika

  • Salt and black pepper

  • Juice of 1 lemon

  • Fresh basil, roughly torn

Directions

  • Pork
  • Preheat oven to 180°C (350°F).
  • Score the pork fillet lengthways halfway through, then open it out like a book. Flatten slightly with your fist.
  • Rub both sides with salt, pepper, and allspice.
  • Heat an ovenproof frying pan with a little oil and sear the pork on both sides over high heat.
  • Pour over two-thirds of the BBQ sauce, transfer the pan to the oven, and roast for 25-30 minutes.
  • Pepper Rice
  • Heat 1 tbsp oil in a large frying pan. Add fennel and cumin seeds and toast until fragrant.
  • Roughly chop the onion and peppers into bite-sized chunks. Add to the pan with the green beans. Stir-fry until lightly browned.
  • Stir in the cooked brown rice and smoked paprika. Season with salt and pepper.
  • Add a splash of BBQ sauce, the lemon juice, and fresh basil. Mix well.
  • Serving
  • Remove the pork from the oven and brush with the remaining BBQ sauce.
  • Slice into strips and serve over the pepper rice.
  • Garnish with extra fresh basil.
