Jump to RecipeOne of the things I love most about traveling is discovering new foods that surprise me – and then trying to recreate them back at home. This recipe was born from exactly that kind of moment, in the most unlikely of places: my little Austrian village.
The Story Behind It
Tourism has always been the lifeblood of our village. Hotels are buzzing, self-catering apartments are everywhere, and traditional Austrian restaurants are staples. But one thing that hasn’t changed is how early supermarkets close – 7 p.m. on weekdays, and completely shut on Sundays.
That means if you arrive late from the UK, tired and hungry, your fridge will almost always be empty. Of course, you could head to a restaurant, but after a long trip, all you really want is to collapse on the sofa. For years, this meant going to bed on an empty stomach.
Then, a game-changer arrived: a kebab and pizza take-away. Even better – it delivers! On one of those late-night arrivals, we gave it a try, and it completely changed our routine.
The Inspiration
When you think of kebab in the UK, the choices are usually chicken or lamb. But in Austria, lamb isn’t common – pork is. So, pork kebab was the local specialty. We decided to give it a shot, tucked into a warm flatbread, and it was absolutely delicious. The meat was juicy, tender, and bursting with flavour.
Back in the UK, I couldn’t stop thinking about it. And since I couldn’t buy it anywhere in my area, I did what I always do: I tried to make it myself.
My Homemade Version
I started with a simple pork loin and seasoned it with a gyros spice mix I had in the cupboard. It turned out to be the perfect match! Paired with Greek-style flatbreads from the freezer, some creamy yoghurt, and a garlicky sauce from pantry staples, my version of Gyros Pork Pizza was born. Once the pork loin is fully cooked, the oven pan should hold a rich, flavourful gravy. Make sure to drizzle it over the meat when serving – it’s absolutely delicious!

Gyros Pork Pizza

Ingredients
- Pork
1.5kg pork loin
30g gyros seasoning (I use Prymat)
- Garlic Sauce
100ml plain yoghurt
100ml mayonnaise
1tbsp olive oil
2tsp lemon juice
3 garlic cloves, minced
1/2tsp Za’atar seasoning
Pinch of oregano
Salt, to taste
- Assembly
4 Greek-style flatbreads
2 tomatoes, sliced
Red and/or white cabbage, finely shredded
Pickled chilli peppers
Directions
- Pork
- Butterfly the pork loin and place in an oven tray.
- Rub both sides with the gyros seasoning, then add a splash of water to the tray.
- Cover with aluminium foil and roast at 160°C (320°F) for 2 hours, removing the foil for the last 30 minutes.
- Garlic sauce
- Combine yoghurt, mayonnaise, olive oil, lemon juice, garlic, za’atar, oregano, and salt in a bowl.
- Mix until smooth and creamy.
- Assembly
- Warm the flatbreads.
- Combine the shredded cabbage with some garlic sauce, then spread onto each flatbread.
- Add slices of pork.
- Top with tomato slices and pickled chilli peppers.
- Drizzle with some more garlic sauce, serve immediately and enjoy!
- Any leftover pork can be safely stored in the freezer for about 2-3 months.
- By the end, the oven pan should hold a rich, flavourful gravy. Drizzle it over the meat when serving – it’s absolutely delicious!
